BOLOGNA (VENISON)

Recipe Introduction
Here's one of my husband's favorites...of course it involved venison.
List of Ingredients
30 lbs. ground venison
10 oz. TenderQuick
16 oz. brown sugar
1/2 oz. dry mustard powder
2 tbsp. garlic powder
1/2 oz. ground mace
1/2 oz. black pepper
1/2 oz. red pepper flakes (opt.)
2 inch fibrous bologna casings
Recipe
Mix all spice ingredients together well. Grind all meat together; add spice mixture and knead well. After mixture is combined, run through the grinder again. Stuff casings with burger mixture. Tie off open end with twine or bread tie. Let stuffed sacks age in the refrigerator for 24 hours. Boil sacks at 160 degrees for 25 minutes
Ground Beef/pork mixture can be substituted.
