    Creamy Chicken a la King

    5 tablespoons sweet butter
    1 cup fresh mushrooms -- sliced
    1/2 red bell pepper -- seeded and diced
    3/4 cup fresh or frozen peas
    1/4 cup all-purpose flour
    32 ounces chicken broth
    3 cups cooked chicken -- cubed
    1/2 cup carrots -- sliced
    1 tablespoon fresh parsley -- minced
    Salt and pepper to taste
    8 ounces wide egg noodles -- cooked

    Saute mushrooms in 1 tbsp. butter until tender and set aside. Cook bell pepper and peas in a small pan of boiling water for 2 minutes; rinse in cold water. In separate saucepan, melt 4 tbsp. butter; sprinkle the flour over the butter and stir with a fork until smooth, about 2 minutes. Slowly add most of the chicken broth, whisking thoroughly. Simmer until thick, about 5 minutes.
    Add chicken, carrots, mushrooms in butter, pepper, peas, cooked carrots, parsley and seasonings. Simmer another 5 minutes, thinning with additional broth, if it becomes too thick. Serve over hot buttered noodles or biscuits.

    Serves 4
