    Preheat oven to 350°.

    Grease two 9” x 5” loaf pans (or three 8” X 3.75” disposable loaf pans).

    List of Ingredients




    4 eggs, beaten
    1 cup oil
    2 cups mashed overripe bananas
    3/4 cup water
    1 Tablespoon banana extract
    2 cups white sugar
    1 cup brown sugar
    3 1/4 cups all-purpose flour
    2 teaspoons baking soda
    1 teaspoon cinnamon
    1 1/2 teaspoon salt



    Recipe



    In a large bowl, mix together the beaten eggs, oil, mashed bananas, water, and banana extract. Stir in the remaining ingredients. Divide evenly between the loaf pans.

    Bake for 50–60 minutes or just until the center of each loaf tests done. Do not overbake. Cool completely.

    NOTE: If you are not using these within a couple of days, these loaves refrigerate and/or freeze beautifully. Just allow them to cool slightly, then wrap them in plastic wrap. You can store the loaves in your refrigerator for a week or more, or in your freezer for a couple of months.
