Rhubarb Cheesecake Squares

List of Ingredients
- 1 1/4 c flour
- 1/2 cup old fashion oats
- 1/2 cup packed brown sugar
- 1/2 cup cold butter
- 8 oz cream cheese - softened
- 3/4 cup sugar
- 1/2 tsp salt
- 1/2 tsp vanilla
- 1/4 tsp cinnamon
- 1/8 tsp nutmeg
- 1 egg - lightly beaten
- 1 1/2 cups chopped rhubarb
Instructions
- Combine flour, oats and brown sugar.
- Cut in butter until crumbly - set aside 1 cup of crumbs
- Press remaining crumbs into 9 inch square pan
- For filling, beat cream cheese and sugar until smooth
- Beat in salt, vanilla cinnamon and nutmeg
- Add egg and beat until just combined
- Stir in rhubarb
- Pour over crust and sprinkle with remaining crumbs
- Bake 350 degrees for 35-40 minutes
