    Rhubarb Cheesecake Squares

    List of Ingredients


    • 1 1/4 c flour
    • 1/2 cup old fashion oats
    • 1/2 cup packed brown sugar
    • 1/2 cup cold butter
    • 8 oz cream cheese - softened
    • 3/4 cup sugar
    • 1/2 tsp salt
    • 1/2 tsp vanilla
    • 1/4 tsp cinnamon
    • 1/8 tsp nutmeg
    • 1 egg - lightly beaten
    • 1 1/2 cups chopped rhubarb


    Instructions


    1. Combine flour, oats and brown sugar.

    2. Cut in butter until crumbly - set aside 1 cup of crumbs

    3. Press remaining crumbs into 9 inch square pan

    4. For filling, beat cream cheese and sugar until smooth

    5. Beat in salt, vanilla cinnamon and nutmeg

    6. Add egg and beat until just combined

    7. Stir in rhubarb

    8. Pour over crust and sprinkle with remaining crumbs

    9. Bake 350 degrees for 35-40 minutes
