Banana Cake

Recipe Introduction
I'll add to this list as time allows- some will be recipes, others will just be tips or experiments I conducted while baking without eggs and/or dairy. If anyone has questions, feel free to ask!
List of Ingredients
3 large very ripe bananas, mashed
3/4 cups vegetable oil
2 heaping tablespoons yogurt (or soy yogurt for vegan)
2 teaspoons vanilla
Whisk together.
2 cups pastry flour
3/4 cups sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon saltRecipe
Sieve together and add to wet ingredients. Whisk until just incorporated while scraping down sides. Divide between two 9" pans. Bake at 350* for about 25 - 30 minutes. Test with a toothpick.

*I have multiplied this recipe by 4 with successful results.
*For banana spice cake, substitute half the sugar with Sucanat and add 1 packet of Celestial Seasonings "Bengal Spice" tea.
*Goes well with vanilla buttercream, cream cheese icing, or mocha buttercream (for the spice version) for filling/coating it, or mango curd or blueberry for a filling with cream cheese icing or vanilla buttercream.
