Chef Dean Thomas’ Oreo Frozen Soufflé. Chef Dean Thomas is the Executive Sous Chef for New England Culinary Institute here at The Inn at Essex.
List of Ingredients
You will need 3 triangular terrine molds
Yield 24 portions
18 egg yolks
1 qt. powdered sugar
6 sheets gelatin
1 qt. Oreo crumbled cookie chunks
2 qts. heavy cream - medium peak
Recipe
Whip yolks and sugar over hot water to a ribbon. Whip cold.
Dissolve the gelatin sheets and melt with the lemon juice. Temper into yolk mixture. Fold in zest, oreo’s and cream. Do not over mix. Fill into 3 triangular molds and freeze.
