I have a love/hate relationship with meatloaf. I love to eat it, but I hate the way mine usually turns out. The flavor is usually good, but the texture and cohesiveness leave a LOT to be desired. Suffice to say that my meatloaf usually makes a good Bolognese. Even if I make a good one once, the next time I try the EXACT SAME RECIPE, it turns into Bolognese again. This is evidenced by the large number of meatloaf recipes in this section. This recipe is definitely worth another try. The cohesiveness was good, and it tasted pretty good. I really think that the cohesiveness is helped by the fact that you don’t form this into a loaf – instead you pat it out into a square baking dish. If you go to the website, you’ll see that I’ve rewritten it a bit. It definitely needs additional seasoning, and the directions tell you to cook it MUCH too long. By the time I got to the end of the recommended cooking time, the loaf was registering 180F!!! And I like a little extra sauce to serve with leftovers.
MEATLOAF:
1 lb. very lean ground beef
1/2 lb. ground pork
1 egg
1 small onion, diced very fine
1 – 15 oz. can tomato sauce, divided (about 6 oz.)
3/4 c. quick oatmeal
1 T. Worcestershire sauce or A-1
A handful of fresh, minced parsley
Seasoning – this needs a LOT of seasoning – 2 t. Penzey’s Mural of Flavor PLUS 1 t. EACH garlic powder and onion powder,
SAUCE:
Remainer of the can of tomato sauce
2 T. brown sugar (or to taste)
2 t. yellow mustard (or to taste)
1 T. apple cider vinegar (or to taste)

MEATLOAF:
Heat the oven to 400F. Spray a 9x9-inch baking pan with baking spray. Mix the meats until well combined and then mix in the rest of the loaf ingredients. Place in the baking dish and pat in an even layer. Bake until it reaches 160F - about 35 minutes (I’m guessing here – I’ll know better when I do this again.)
Mix the sauce ingredients together and set aside.
Remove from the oven and spread with enough sauce to make a nice layer. You will NOT need all of the sauce – this recipe makes enough for leftovers. Place back in the oven and cook for another 10-15 minutes. Remove from the oven and let sit 10 minutes before serving.
I think that heating up the leftover sauce before using them would be a good idea.
