Christmas Morn Casserole

Recipe Introduction
This was very easy and quite good. I love something that I can put together the evening before I want to serve it and then cook it fresh the next morning. I took it to an ECW meeting and it was VERY popular. You’ll see that the original directions call for it to cook for 1 hour. I was getting ready to go to the meeting and didn’t watch it and after an hour, it was definitely overcooked – still good, but a little dry on the edges. I’m guessing that 45-50 minutes would have been sufficient. I’ll keep an eye on it next time.
List of Ingredients
6 eggs, slightly beaten
1 c. shredded Cheddar cheese
1 lb. pork sausage, browned and drained
1 c. biscuit baking mix
2 c. milk
1 t. oregano [I omitted this since I used sage sausage]
1 t. dry mustard
Recipe
Combine all ingredients and pour into a 13”x9” baking dish. Cover and refrigerate overnight. Bake, uncovered, at 350 degrees for one hour [see my note above].
Serves 10.
