I saw Emmy make this on her YouTube channel and was skeptical, but gave it a try anyway since I trust her. It is very good and incredibly easy and truly only takes 2 hours in the slow cooker. I found it a little sweeter than I’d really like – next time I think I’ll try backing off the amount of sugar a bit (maybe one quarter of a cup). I use the oven method for proofing bread: bring the oven to 175F-200F and let heat for 10 minutes. Turn the oven off and place your covered bowl of dough in the oven to rise. This is one of those recipes where it is actually a good idea to go to her post and see how she describes her process. It is very helpful. You’ll see rosemary listed as an optional ingredient. The recipe author doesn’t specify how much or whether she used fresh or dried (though I think it looks dried in the photos), so use your own judgement. She also says that she kneaded some into the dough when she prepped the dough.
1 cup warm water (105F-115F)
1/3 cup sugar
1 tablespoon active dry yeast
1 and one half teaspoon salt
2 tablespoons vegetable oil
3 cups AP flour
Rosemary, optional –
Recipe
Pour warm water into a large bowl. Add sugar and mix until dissolved. Add dry yeast and stir. Let sit in a warm spot for about 10 minutes until foamy (a microwave with the light on is a good spot for this). When foamy ddd salt to bowl and stir to dissolve. Add vegetable oil. Add flour and mix with hands until everything is combined. Knead the dough for about 5 minutes and form into a ball.
Coat a large bowl with olive oil and place the dough in it. Cover with plastic wrap and place in a warm spot (see my note above) for about 30 minutes – it should be doubled in size.
Spray a 6 quart slow cooker with cooking spray and cut a piece of parchment paper and place in bottom of slow cooker. Make sure the parchment paper comes up the sides of the slow cooker so when the bread expands it won’t stick to the sides. Take the paper out and place the risen dough in the middle of it. Lift and lower into the slow cooker. Sprinkle with rosemary, if desired. Cook on HIGH for 2 hours.
Remove from slow cooker and brush a little bit of butter on top. Place under broiler for about 1 minute until slightly brown. Keep an eye on it and make sure it does not burn! This isn’t an absolutely necessary step, but it makes for a crispy top and makes it look beautiful.
