    Easy Edna Lewis Vinaigrette

    Source of Recipe

Edna Lewis via Anna at her YouTube channel “Cooking the Books” – the Edna Lewis episode.

    Recipe Introduction

Just a simple, but really delicious salad dressing. It couldn’t be easier to put together – and I almost always have all of the ingredients on hand. This is honestly my new go-to vinaigrette.

    List of Ingredients

    1/2 c. cider vinegar
    1 1/2 t. salt
1/2 t. freshly ground black pepper
    1/2 t. sugar (optional)
    1/2 t. dry mustard
    1/2 t. scraped onion
1 clove garlic, peeled and cut in half
    2/3 c. olive oil

    Recipe

Place all ingredients in a jar and shake until the sugar and salt are dissolved. Remove the garlic (I neglected to do this – we’ll see if that matters). Shake again before using.

    Makes about 1 1/4 cups.
