    Every recipe I’ve ever tried has too little broccoli and too much rice. I’ve combined a few different recipes I’ve found online and made some adjustments to make a casserole that we all liked.

    List of Ingredients




    2 1/2 T. minced onion
    2 1/2 T. minced celery
    2 T. butter
    1/2 c. RAW Minute Rice
    One half can of cream of onion soup (you can use other cream soups)
    1/2 c. milk or chicken broth
    4 oz. Cheez Whiz
    20-24 oz. frozen broccoli (I use the florets, trim off any stem and cut into bite sized pieces
    Pinch of salt
    Freshly ground black pepper
    Non-stick spray
    1 sleeve of Ritz crackers, crushed
    5 T. butter, melted

    Recipe



    While you are preparing the ingredients, let the package of frozen broccoli partially thaw on the counter. Heat oven to 350 degrees.

    Sauté the onion and celery in the butter until softened. Combine all ingredients in a large bowl, adding salt and pepper (I melted the Whiz slightly in the microwave so it would incorporate better). Determine what size casserole dish you need and spray with non-stick spray. Place mixture in the pan. Mix the cracker crumbs and the butter and sprinkle over broccoli/rice mixture. Bake for 30-40 minutes – watch toward the end to make sure that the cracker crumbs don’t overbrown. If they start to look a little too dark, you can cover the casserole with foil.

    Serves 4-6
