Cashew Cookies with Browned Butter Icing
1 c. firmly packed brown sugar
1/2 c. butter
1 egg
1 tsp. vanilla
2 c. flour
3/4 tsp. soda
3/4 tsp. baking powder
1/4 tsp. salt
1/3 c. sour cream
1-1/2 c. salted cashews (don't chop)
Cream brown sugar and butter. Add and beat in egg and
vanilla. Combine flour, soda, baking powder and salt. Add to creamed mixture alternately with sour cream. Mix well. Carefully fold in cashews. Drop by teaspoon onto a greased cookie sheet. Bake at 350° 9-10 minutes or until brown. Cool and frost.
Icing:
1/2 c. butter
3 Tbsp. evaporated milk
2 c. confectioners sugar
1 tsp. vanilla
cashew halves
Lightly brown butter; (watch..it will burn quickly) remove from heat and add sugar and evaporated milk. Stir in vanilla. Frost cooled cookies. Put 1/2 cashew on top of each cookie.
Makes 4-1/2 doz.
Note: Frosting is thin enough, you can dip cookies instead of spreading it on.
