We enjoy this Breakfast Frittata often. Make certain you use Gluten Free Sausage and shredded cheese if you don't grate your own cheese. It's easy to make.

1/2 Cup Green Onion -- Sliced small
1/2 Cup Zucchini -- Half slices or diced
1/2 Cup Tomato -- Seeded & Diced
1/2 Cup Meat; Ham, Canadian Bacon or Sausage -- Diced
6 Eggs - Beaten until pale and frothy
1/2 Cup Grated Swiss Cheese or other favorite
white cheese -- Grated to your liking
2 Tablespoons Basil or Cilantro -- Chopped; Fresh or dried
Olive oil and or butter for frying
Recipe
Preheat the oven to 350° In a Skillet, heat 1 Tablespoon of Olive Oil and 1 Tablespoon of Butter, (or 2 Tablespoons of Olive Oil,) until bubbly.
Cooked Onion until well cooked. If using regular onion until browned. Add Zucchini and cook until soft.
Add the tomatoes and meat near the end because they only need to be heated through.
Add the Eggs to the Skillet and Sprinkle with Cheese. As you do so remove the skillet from the heat.
Some people place the skillet in the oven and let it bake. We prefer at this point to pour the mixture into a glass or metal square 8X8 or 9x9 Baking pan.
Put it in the oven and bake for 15 to 20 Minutes until firm and fluffy; you will need to check on it from time to time to see how it looks.
Remove from the oven, cut into squares and serve hot or cold. A slice or two makes a nice breakfast. 1/3 of this dish will serve 3 people, smaller squares will serve more, or one could eat two thirds and one could eat one third.
This is a basic frittata recipe. You can make almost any mixture you like, addiding Ham, Cheese, Italian Sausage, Pepporoni, and any leftover vegetables. This is one of those dishes you can use leftovers in, and it is delicisious. You can also top with sour Cream.
