2-½ c Meat Sauce of choice
2 C water
¾ C yellow cornmeal
¾ C cold water
½ tsp salt
1 C grated Parmesan cheese
Recipe
Heat desired meat sauce; cover and keep warm. In saucepan bring 2 C water to a rolling boil. Meanwhile, combine cornmeal, ¾ C old water, and salt. Slowly pour cornmeal mixture into boiling water, stirring constantly. Return just to boiling; reduce heat to low. Cook, uncovered, about 5min’s or til thick. Stirring frequently.
Pour about 2 T of the cornmeal mixture into ea of 8 6oz custard cups. Spread ea w/about 2 T of the meat sauce and sprinkle w/1 T of the cheese. Repeat the layers of cornmeal, meat and cheese. Bake, covered, in 350° oven about 15min’s. Let stand 5min’s b/4 serving.
