Pasta w/Smoked Salmon & Dill

9 oz penne or linguine
3 T butter
12 oz smoked salmon, cut into strips
1 cup plus 2 T whipping cream
1 t tomato paste
3 t chopped fresh dill
1/8 t cayenne pepperRecipe
Cook pasta until your liking in a large satled pot of water. Reserve 1/4 cup cooking liquid when draining.
Meanwhile, melt butter in skillet over medium heat. Add salmon until fish turns light pink, stirring frequently, about 2 minutes. stir in cream and tomato paste. Cook until sauce is heated through, about 2 minutes. Stir in 2 teaspoons dill and cayenne. Mix pasta into sauce, adding cooking liquid one tablespoon at a time, if needed to moisten.
Makes 4 servings.
