    Best Squash Casserole

    2 lbs. yellow squash
    1/4 cup chopped onion

    Cook squash and onion together in a little water until tender- (can microwave.) Drain and mash squash.

    Stir together 1 can cream of chicken soup and 1 cup sour cream. Fold in 1 cup shredded carrot; add squash/onion mixture. Pour into greased 13x9" casserole dish.

    Melt 1 stick margarine and add 1 8 oz. pkg. dry stuffing mix. Stir to combine well, and spread on top of squash in pan. Bake at 350 for 25 minutes.
