    Ham And Potato Dinner

    List of Ingredients




    8 to 10 medium potatoes sliced 1/8 thick
    12 eggs slightly beaten
    2 cups diced ham
    1 large sliced onion
    1/2 cup oil
    salt and pepper to taste
    1/2 cup diced green pepper (optional)

    Recipe



    heat oil in skillet
    add potatoes, ham, onion, salt and pepper
    cook for 6 mins.
    turn and cook additional 6 mins.
    cover and cook 5 mins
    repeat till potatoes are tender
    add eggs and cover and cook till eggs are done
    turning as needed
