Red Chicken

2 Tbls. oil
1 chicken (3 lb)
4 medium onions, chopped
6 medium tomatoes, chopped
1 orange, sliced, unpeeled
1+1/2 tsp. brown sugar
1+1/2 tsp. salt
1/4 tsp. pepper
1/2 cup chicken stock
1/3 cup raspberry jam
1/3 cup sherry
Brown the chicken in the oil in a large skillet on all sides. Remove and keep warm.
Saute the onions in the skillet until golden brown. Put in crockpot.
Add the tomatoes, orange, sugar, salt and pepper to the onions.
Put the chicken into the crockpot on top of the tomato mixture.
Pour the chicken stock into the skillet and scrape the bottom. Cook over a low heat for 1 minute and pour over the chicken.
Cover and cook on the low setting (200ºF) for 5 - 7 hours. When the chicken is cooked, remove from crockpot and keep warm.
Pour the liquid from the crockpot into a saucepan. Boil rapidly to reduce to a thick sauce.
Add the jam and sherry and bring back to a boil, stirring constantly.
Pour the sauce over the chicken and serve immediately.
