    Asparagus Egg Pasta


    1/2 cup grated Parmesan cheese
    1 tbs olive oil
    12 oz linguine pasta
    4 oz cubed bacon
    4 large eggs
    1 bunch asparagus, trimmed, halved lengthwise
    1 shallot, chopped

    Recipe




    Heat covered pot of salted water to boiling.

    Heat bacon in a skillet, cook until crisp.

    Add shallot and 1/4 tsp salt, cook until softened, transfer mixture to bowl.

    Wipe out skillet, set aside.

    In boiling water, cook pasta as label directs, 4 min. before its finished cooking add asparagus.

    Add oil to skillet, heat.

    CRACK eggs into cups, slide eggs into skillet, cook until whites set around edges.

    Cover skillet, cook until whites set completely, transfer to paper towels.

    Reserve 2 tbs pasta cooking water.

    Drain pasta and asparagus, add to bowl with bacon.

    Add Parmesan and cooking water, toss.

    Divide among 4 bowls.

    Top each with 1 egg, pepper and more Parmesan, then SERVE...
