Aunt Shar’s Possum Pie
1 pound yellow summer squash, cooked until just tender and drained well
3 tablespoons butter
1 cup cheddar cheese, grated
1 cup crushed saltine crackers (about 30)
1 tablespoon grated onion
2 eggs
1 cup hot milk
1 teaspoon salt
1/4 teaspoon freshly ground pepperRecipe
Pour the hot squash into the bowl of a mixer; add the butter and mix on low speed until the butter is melted and the squash is mashed.
Add the remaining ingredients and mix well; pour into a buttered 1 1/2 quart soufflé or casserole dish.
Bake in a preheated 375° oven until puffed and golden, about 30 minutes.
