    English Lemon Shortbread

    Shortbread.

    Ingredients:

    1 c. Land O LakesŪ butter, softened*
    1/2 c. sugar
    2 T. lemon juice
    2 tsp. grated lemon peel
    2 1/2 c. all-purpose flour

    *Substitute Land O LakesŪ soft baking butter with canola oil right from the
    refrigerator.

    Directions:

    Heat oven to 350 degrees. Combine butter, sugar, lemon juice and lemon peel
    in large bowl. Beat at medium speed, scraping bowl often, until creamy.
    Reduce speed to low. Add flour and beat until mixture resembles coarse
    crumbs. Knead dough by hand until smooth. Press dough evenly into lightly
    greased 8-inch square baking pan. Bake for 35 to 40 minutes or until light
    golden brown. Cool completely.

    Glaze.

    Ingredients:

    1/2 c. confectioners' sugar
    1 T. Land O LakesŪ butter, softened*
    1 T. lemon juice

    *Substitute Land O LakesŪ soft baking butter with canola oil right from the
    refrigerator.

    Directions:

    Combine all glaze ingredients in a small bowl using a wire whisk. Mix until
    smooth. Spread a thin layer of glaze over cooled shortbread.

    Garnish.

    Ingredients:

    1 T. grated lemon peel

    Directions:

    Sprinkle lemon peel over the shortbread. Let stand 30 minutes to set. Cut
    into 2 1/2 x 3/4-inch strips.
