Deviled Pork Roast

1 (3 lb.) Lean Pork Roast
2 T. Dijon mustard
1 tsp. ground thyme
Fresh ground pepper to taste
Spread roast with a thin coating of mustard. Sprinkle with thyme and pepper. Roast, uncovered, at 357-F for 1-1/2 hours.
