Coq au Vin

Recipe Introduction
When looking around for an impressive, yet simple recipe for a dinner party, Carole suggested coq au vin and gave me her recipe with some guidance from Julia.
List of Ingredients
6-8 slices bacon
2 or more tbsp. olive oil
2 1/2 lbs. cut up chicken
salt and pepper
1 bay leaf
1/4 tsp. thyme
16 to 20 small white onions, peeled
3 tbsp. flour
2 cups red wine (Burgundy, Pinot Noir)
2 cups chicken or vegetable stock
1 - 2 cloves garlic, minced
1 tbsp. tomato paste
3/4 - 1 lb. mushrooms, sliced or quarteredRecipe
Saute bacon in oil in a heavy casserole or pot. Remove bacon when brown and set aside.
Brown chicken pieces in bacon drippings (sprinkle chicken with flour, salt and pepper).
Remove chicken, add onions, mushrooms and saute.
Put chicken back in and add wine and broth, as well as garlic, tomato paste, thyme and bay leaf.
Cover and simmer for 1 - 1/4 hours.
Goes well with salad, mashed potatoes and string beans or asparagus.
Serves 4 to 6
