    Level 1 ~ Pro/Fat // I hadn't made a grilled chicken salad before. The chicken salads I had made, were more like tuna or egg salad. We really loved this! My notes are at the end.

    List of Ingredients




    Grilled chicken breast - cubed
    mayo
    finly chopped: celery, onion, waterchesnuts and multi-colored peppers (whatever you have on hand)
    small cubed zucchini
    season with garlic powder, salt and pepper
    dash of horseradish gives it a little kick

    Recipe



    Mix all ingredients together. May serve in Romaine cups.

    Deb's notes: I grilled (stove top) 4 chicken breasts. I do this hot and fast so they remain tender and not dried out.

    I then cubed them and added: 4-5 stalks sliced celery, 10 scallions, 1 can waterchestnuts, 1 red pepper, salt & pepper, about 3/4 teaspoon garlic powder and about 1 teaspoon horseradish.

    Chill thoroughly.
