    Honey Thyme Shrimp Kabobs

    List of Ingredients




    1/4 cup lime juice

    1 Tbsp honey

    1 tsp dried thyme leaves, crushed

    1 lb jumbo shrimp, thawed

    3 small cherry tomatoes, quartered

    4 green onions, cut into 2-inch pieces

    2 green peppers, cut into wedges

    1 lime, cut into wedges

    6 skewers

    Recipe



    1. In a medium-size ZiplocŪ Container, combine lime juice, honey, and thyme. Mix well.


    2. Add shrimp and cover.


    3. Marinade in refrigerator for 30 minutes.


    4. Drain marinade, reserving the marinade.


    5. On 6 skewers, alternately thread shrimp, tomatoes, green onions, and green peppers. Top each skewer with one lime wedge.


    6. Grill, covered, over medium coals for 3 to 4 minutes or until hot. Turn and brush each skewer occasionally with the marinade mixture.


    SUGGESTION: Serve with white rice.

    SERVES 6
