1 cup black eyed peas, dried
1/2 tsp salt (optional)
1 large apple, diced
1 medium onion, diced
1 tsp cumin seed
2 tsp coriander
1 tsp paprika or chili powder
1 tbsp olive oil Recipe
Sort, rinse and soak black eyed peas for 3 hours. Drain, rinse and cover with water, salt, diced apple, and onion. Bring to boil in covered pan 35-45 minutes. In a separate small skillet, roast cumin seeds and olive oil. Add coriander, paprika or chili powder. Pour small amount of bean juice into skillet, then pour juice and spices into beans. Serve with a grain such as brown rice or whole wheat toast.
