    Zucchini Rice Casserole

    List of Ingredients




    1/2 tsp. salt
    1/2 C. rice
    1 onion, chopped
    1 lb. zucchini (3-4 med.)
    1/2 green pepper
    1 (8-oz.) can tomato sauce
    2/3 C. shredded cheese
    1/4 C. parmesan cheese

    Recipe



    Boil 1 cup water with 1/4 tsp. salt.
    Add rice and onion; reduce heat, cover and simmer until rice is tender (about 20 minutes).
    Wash zucchini and cut into 1/2" slices. Boil 1/2 cup water with 1/4 tsp. salt. Add zucchini and green pepper; cook about 5 minutes until zucchini is tender. Remove from heat and drain.

    Add tomato sauce and zucchini mixture to rice and lightly mix.
    Place in 1-1/2 quart casserole dish and top with mix cheeses.

    Bake uncovered 20 minutes at 350*

    (for complete meal~add 1/2 to 1 lb. browned beef. Also add, pinch of mint, allspice, cinnamon, garlic, salt and pepper.)
