Candied Cherry Casserole Cookies

2 eggs
3/4 cup sugar
1/4 cup light corn syrup
1 (8-ounce) package pitted dates, cut into pieces
1 (3 1/2-ounce) can flaked coconut(1 1/3 cups)
1 1/4 cups coarsely chopped walnuts
1 teaspoon vanilla
Confectioners’ or granulated sugar
Halved candied cherries
Recipe
Preheat oven to 350 degrees.
In large bowl, beat eggs on medium speed. Add sugar and corn syrup. Beat until smooth. With a wooden spoon, stir in dates, coconut, walnuts and vanilla. Turn into ungreased 2-quart casserole. Bake for 30 minutes. Immediately beat well with a wooden spoon until mixture thickens. Cool.
Shape dough into 1-inch balls. Roll in confectioners’ sugar to taste. Press 1 cherry half into center of each ball. Store in tightly covered container.
Serving quantity: Makes 4 dozen.
