Pork Stacked Enchilada Casserole

1 (8oz) container sour cream
1 (8oz) container plain yogurt
1 (10-3/4oz) can cream of chicken soup
1 (4oz) can diced green chilies
1 can green enchilada sauce
1 can original Rotel tomatoes (drained)
12 (6-7 inch) corn tortillas
1 Cup (4oz) shredded Cheddar and Monterey Jack cheese, plus more for topping
1/2 lb. ground pork
1/4 cup red bell pepper
1/4 cup green bell pepper
1 small hot pepper of choice (thinly sliced-optional)
1/2 package taco or burrito seasoning
1/4 Cup sliced green onions (or white if that is what you have on hand)
sliced black olives, if you like them
Recipe
Brown ground pork in skillet with a little oil. Be gentle and try not to reduce the pork to tiny crumbs of meat. Add bell peppers and onion, cook until softened. Add taco seasoning and Rotel tomatoes. Mix well and allow flavors to blend over low heat. Heat oven to 350F degrees. Combine sour cream, yogurt, soup and chilies; mix well. Heat some oil in another skillet and quick fry tortillas for about 4 seconds on each side. Spray a 9x9-inch baking dish with nonstick cooking spray. Pour enchilada sauce into a large bowl, dip a tortilla into the sauce, shake off excess and place in bottom of baking dish. Repeat until bottom of baking dish is covered with a layer of tortillas, cutting or tearing the tortillas in half and/or overlapping as necessary. Spoon about 3 Tbsp. sour cream mixture over the tortillas. Sprinkle some of the pork/pepper mixture over that layer. Sprinkle some of the cheese over that layer. Cover with another layer of tortillas and repeat the layering until you have used up all the tortillas and sauce. Sprinkle the top with a few red and green peppers, black olives and some additional cheese.
Cover with foil and bake for 25 to 30 minutes, or until hot and bubbly. Remove foil; sprinkle with more cheese. Return to oven & bake, uncovered, until cheese is melted.
This recipe could, of course, be made using ground beef or cooked chicken (as in the original).
