Creamy cole slaw pairs well with fried chicken, but who needs all that mayo? This one uses Greek yogurt and a healthier mayo, plus a few other secret ingredients.
Ingredients:
Dressing:
1/2 teaspoon Dijon mustard
1-1/2 teaspoons olive or canola oil mayonnaise
1-1/2 tablespoons fat-free Greek yogurt
Dash teaspoon hot sauce
1-1/2 teaspoons lemon juice
1/2 (12 ounce) bag rainbow slaw*
1 Granny Smith apple, sliced into matchsticks or grated with a box grater
* This variety had broccoli, cauliflower, carrots, and red cabbage.
Tips:
This dish tastes better the longer it sits, so make it up to a couple of days ahead.
Use any leftovers on a sandwich thin with pork tenderloin or chicken topped with BBQ sauce.
Directions:
Whisk together all the dressing ingredients in a large bowl, then toss with the slaw and apples. Serve immediately or refrigerate.
