    1 kg/2 lb stewing beef, cubed
    1 onion, sliced
    Pinch each of ground cloves, mace
    5 whole peppercorns
    Salt
    75 ml/3 fl oz red wine or cider vinegar
    50g/2 oz Dark Muscovado sugar
    600 ml/20 fl oz dark beer
    2 sprigs thyme
    2 bay leaves

    Recipe



    Put the meat and onions in a large bowl. Combine the spices with the wine or cider vinegar and sugar ad pour over the beef. Cover and leave to stand overnight, turning the meat from time to time. Next day dip the contents of the bowl into a large pan and pour in the beer. Add the herbs .Bring to the boil, then reduce the heat and simmer for 2-3 hours until the meat is tender.
