Wholemeal shortcrust pastry
350g potatoes
450g onions - chopped
25g butter
1 tablespoon fresh parsley, chopped
100g Pilgrims Choiceฎ Classic Mature Cheddar cheese, grated
2 garlic cloves, crushed
1 tbsp milk
Salt and Freshly Ground pepper to tasteRecipe
Roll out the pastry and line an 8 (20 cm) flan tin. In a saucepan of lightly salted water, boil the potatoes until tender.
Heat a frying pan with the oil and then fry the onions until they are soft but not coloured. Combine the potatoes and onions, add the butter, parsley, half of the cheese, garlic, milk and season well to taste. Cool, and then use to fill the pastry case. Sprinkle with the remaining cheese and bake in the oven at 220ฐ C (425ฐ F/Mark 7) for 25-30 minutes until brown.
