    SUSSEX STEWED STEAK

    11/4kg / 21/2lb chuck steak, top rump or thick flank, cut in one piece
    30g / 2 tbsp well seasoned flour
    1 large onion, sliced
    75-90ml / 5-6 tbsp port
    75-90ml / 5-6 tbsp stout
    30ml / 2 tbsp mushroom ketchup or wine vinegar
    salt and pepper

    First chose a dish which will hold the meat closely in one flat layer.
    Rub the beef on both sides with the seasoned flour and lay it in the
    dish, put the onion on top. Pour over the 3 liquids, and cover tightly.

    Put in an oven pre-heated to 1400C / 2750F / Gas mark 1, for about 3
    hours.
    At the end of the cooking time season with salt and pepper.

    Serve with mashed potato and fried mushrooms, large field mushrooms if
    possible

    Serves 6.
