"Soulful" Stew

List of Ingredients
2# Boneless, skinless Chicken thighs or breasts, cut into 1x3/4 strips
1/2 c. flour
1/4 c. oil
2 c. chopped onions
3 bay leaves
1 1/4 c. green pepper, chopped
1 jalapeρo pepper, minced
2 c. carrots, cut in rounds
1 15oz.can black eyed peas, drained
4-6 garlic cloves, minced
1# ham, diced
1 c. chicken stock
1 can (12oz) chopped tomato
1 c. Favorite bbq sauce,
1 tbsp. Worcestershire sauce
1 15oz can sweet corn
1 10oz bag fresh spinach (cut in ribbons)
1 tsp cumin
1 tbsp. fresh thyme
1 tbsp. oregano
salt, pepper & hot sauce to taste
Recipe
Step 1: Toss chicken with 1/2 c. of flour seasoned with salt & pepper.
Step 2: Heat oil til hot and brown chicken in batches. Remove from pan and set aside.
Step 3: Sautι onions, peppers & bay leaves til soft. Add ham and garlic and cook 2 minutes.
Step 4: Add browned chicken to large pot with juices, then add chicken stock, BBQ, Worcestershire, and carrots. Bring to a boil then simmer til carrots and soft, approx. 15-20 minutes.
Step 5: Add black eyed peas, corn, fresh spinach, cumin, thyme and oregano and simmer for 15 minutes, or until all flavors are blended.
Step 6: Adjust taste with salt, pepper, and hot sauce.
