    Ingredients (Marinade):
    1 cup Worcestershire sauce
    1/2 C. white vinegar
    1/2 tsp. kosher salt
    1 tbsp. cajun seasoning
    1/4 C. fresh chopped thyme
    1/4 C fresh chopped oregano

    Recipe



    Place 5 lbs. of wings (tips removed) in marinade (see ingredients above) overnight. The next day, drain the wings -- which will be cooked in batches. Dredge the wings in 16 oz chic pea flour [or any flour of your choice] seasoned with 2 tablespoons of cayenne pepper, more if you like them very hot. Fry in 350 degree oil for approx. 8-10 min. or until cooked through. Check by piercing with a knife (they should not be red). Then saute in 2 oz. olive oil and 1 tsp. of chopped garlic. Remove from pan and toss in metal bowl with 1/4 cup chopped basil and 1/4 cup grated Parmesan.
