    Recipe Introduction

    Notes: Be careful with the Badia Complete seasoning. When I first made this as instructed, the Badia was too overpowering. I suggest to "Season to Taste" in your own individual bowl. It is a good seasoning to add, I love it, but sparingly.

    List of Ingredients

    • 2 cubes chicken-flavored bouillon
    • 1 (16 oz) box elbow macaroni
    • 1 stick (8 tbsp) salted butter, divided
    • 3 tbsp all-purpose flour
    • 2 ½ cups whole milk, divided
    • 8 oz Velveeta cheese, chopped
    • 1 block Colby Jack cheese, shredded (reserve some for topping)
    • 1 block medium cheddar cheese, shredded (reserve some for topping)
    • 1 (8 oz) bag four-cheese Mexican blend
    • 2 tbsp sour cream

    • Seasonings:
    • 1 tsp salt
    • ¼ tsp black pepper
    • 1 tsp cayenne pepper
    • 1 tsp paprika
    • 2 tsp garlic powder
    • 2 tsp onion powder
    • 3 tsp Badia Complete seasoning (divided) Option: See Notes





    Recipe

    Step 1: Cook the Pasta
    1. Bring 12 cups of water to a boil. Add bouillon cubes.

    2. Stir in elbow macaroni and cook until al dente, following package directions.

    3. Drain (do not rinse). Place pasta in a large bowl and toss with 2 tbsp butter to prevent sticking. Set aside.

    Step 2: Make the Cheese Sauce
    1. In a saucepan over medium heat, melt 4 tbsp butter.

    2. Whisk in flour and cook for 3–4 minutes to form a roux.

    3. Slowly add 2 cups milk, whisking until smooth and slightly thickened.

    4. Stir in Velveeta, half of the Colby Jack, half of the cheddar, and the entire bag of Mexican blend. Cook until melted and creamy.

    5. Season with salt, pepper, cayenne, paprika, garlic powder, onion powder, and 2 tsp Badia Complete. Simmer 2 minutes, then remove from heat.

    Step 3: Combine
    1. Pour cheese sauce over the pasta. Mix well.

    2. Stir in sour cream.

    3. Add ½ cup milk and 1 tsp Badia Complete, mixing until creamy and fully combined.

    Step 4: Bake
    1. Preheat oven to 350°F (175°C). Grease an aluminum tray or baking dish.

    2. Spread macaroni mixture evenly in the dish. Cover with foil and bake 20 minutes.

    3. Remove foil, stir, then top with remaining Colby Jack and cheddar. Sprinkle lightly with cayenne and paprika.

    4. Bake uncovered on the top rack for 20–30 minutes, or until golden and bubbly.
    Serve

    Remove from oven and let cool slightly before serving. Creamy, cheesy, and perfectly seasoned — Southern comfort on a plate!

    Yields: ~15 servings
