    Lemon Blueberry Pie


    1 (9-inch) graham cracker crust or baked pastry shell
    3 egg yolks **
    1 (14-ounce) can Eagle� Brand Sweetened Condensed Milk (NOT evaporated milk)
    1/2 cup Lemon Juice from Concentrate
    1 1/2 teaspoons grated lemon rind, optional
    Yellow food coloring, optional
    1 (21-ounce) can blueberry pie filling, chilled
    whipped topping, or whipped cream

    Recipe





    Preheat oven to 350�. In medium bowl, beat egg yolks; stir in Eagle Brand, lemon juice, rind, and food coloring, if desired.

    Pour into prepared crust; bake 8 minutes. Cool. Chill. Top with pie filling. Garnish with whipped topping. Refrigerate leftovers.
