    Palms Tuna

    Wasabi Soy Sauce (Hoisin Sauce, Wasabi powder, Water, lemon juice)
    Marinade (Soy sauce, sesame oil, mandarin orange juice)
    Breading (pistachio nuts, flour, onion powder, crushed red pepper, salt)
    (For frying) sesame oil and clarified butter

    Cut tuna into 8oz steaks. Marinade tuna for at least 4 hours but not over 24 hours. Take tuna from marinade and place directly in pistachio breading turn to coat completely. Heat butter and sesame oil in skillet over med-high heat (about 325 degrees). Place breaded tuna in pan and turn once. Fry for about 1 ½ minutes on each side until medium rare. Remove from pan, place on cutting board and slice into medallions. Place in plate on puddle of beurre blanc sauce. Drizzle soy-wasabi sauce over tuna and dot outer edges of plate with Siracha chili sauce.
