    Pan fried Salmon Cakes With Greek Yogurt with Fennel and Dill

    2 lbs Salmon
    1/2 cup egg yolk
    1/2 cup Bread crumbs
    1/2 cup chopped Onion, Celery & Green Pepper
    1 Tbls chopped Parsley
    1 tsp Garlic powder

    Salt & Pepper to taste
    Directions: Bake Salmon to medium at 325 ( 5-7 minutes but still pink in the middle)
    Crumble Salmon into mixing bowl when cool.
    Add rest of ingredients and adjust wet and dry ingredients accordingly so cakes can be formed.
    Cook in pan with vegetable oil till golden and crispy. Dry on paper towel and serve


    Yogurt sauce
    1 cup plain Yogurt
    1 Tbls fresh Garlic
    1 Tsp ground Fennel seed
    2 Tbls diced Cucumber
    1 Tbls chopped fresh Dill

    Salt & Pepper to taste
    Place in bowl and mix together
