Pineapple Relish

List of Ingredients
- 2 (1-inch-thick) slices fresh pineapple or 3 to 4 canned pineapple rings
- 2 (1/2-inch-thick) slices red onion
- 1/2 jalapeņo pepper
- 1/2 teaspoon olive oil
- Juice of 1 lime
- 2 teaspoons chopped mint or cilantro
- Salt and pepper to taste
Instructions
- On a hot grill, grill the pineapple, onion and jalapeņo, about 2 minutes per side. Allow to cool to room temperature, then dice. If you'd like to make the relish less hot, remove jalapeņo seeds before dicing.
- Combine grilled ingredients with the olive oil, lime juice, herbs, salt and pepper in a medium bowl. Stir together thoroughly.
- Serve at room temperature.
