List of Ingredients
4.5 lbs pork loin roast
2 cloves garlic, sliced
2 strips lemon zest, minced
2 to 3 teaspoons minced fresh rosemary
2 to 3 teaspoons minced fresh sage
salt
freshly ground pepper
3 to 4 tablespoons extra virgin olive oil
Recipe
Preheat oven to 400 deg. F. Mix all ingredients except olive
oil in a
bowl. Spread the olive oil on the bottom of your roasting
pan (I used
a glass 9 by 13 inch casserole) and place the roast on top.
Pierce the
top of the roast in several places with a sharp knife.
Rub the roast with your herb mixture, making sure the garlic
and
herbs are pushed into the holes as well as all over the
roast.
Roast the meat for 15 minutes at 400 deg., then turn heat
down to 350
degrees for at least an hour. I cooked it 70 minutes because
we like
our pork well done, but even this long, it was tender,
juicy, and just a
tinge of pink.
