1 pound ground beef
1 large can no sugar Hunts tomato sauce
2 cups ricotta cheese
1 egg, slightly beaten
1/2 cup parmesan cheese
2 tbsps. parsley
4 medium zucchini,thinly sliced lengthwise
1 cup shredded mozzarella cheese
Preheat oven to 350 degrees. In medium saucepan, brown ground beef until no longer pink; drain. Stir in tomato sauce, simmer 10 minutes. In small bowl, combine ricotta cheese, egg, parmesan cheese and parsley; set aside. In meduim saucepan, bring 1 quart water to boil. Add zucchini and cook 2 minutes; remove and rinse under cold running water. I 12x8-inch casserole, layer 1/2 of the zucchini,ricotta mixture and meat sauce. Repeat layers. top with mozzarella and bake 30 minutes or until cheese is melted. makes 6 servings. Recipe
