List of Ingredients
- 2 to 3 pound chuck roast
- 1 small bag dried pinto beans, soaked overnight
- 2 tablespoons chili powder
- 1 tablespoon groun cumin
- 1 tablespoon salt
- 1 tablespoon dried oregano
- 1 tablespoon minced garlic
- 1 can chopped green chiles
Instructions
- Put everything in crockpot and cover with water. Cook in large crockpot for 6 to 8 hours. If it is for lunch what I do is get up early start the crockpot and then go back to bed for a while.
- When you get home shred the beef. It will be very tender and usually will break apart with just a wooden spoon. Stir and within 15 minutes it will thicken and be ready to serve.
- Serve the chalupa over a bed of fritos and top with chopped tomatoes, green onions, lettuce, sour cream, etc. Eat with a fork (or you could serve it with tortillas).
