    Holiday Pistachio Icebox Cookies

    List of Ingredients




    1/2 Cup Butter Or Margarine -- Softened
    1 Teaspoon Vanilla
    1/2 Teaspoon Baking Powder
    1 Cup Sugar
    1 Egg
    1 1/2 Cups Flour
    1/2 Cup Natural Pistachios -- Chopped


    Recipe



    Cream butter and sugar. Add vanilla and egg; blend until smooth.
    Combine flour and baking powder; add to creamed mixture. Stir in pistachios.
    Shape dough into 2 rolls, about 1 1/4 inches each in diameter. Wrap in
    waxed paper or plastic wrap; chill thoroughly. Cut into 1.4 inch thick
    slices.
    Bake at 400 degrees 6 or 7 minutes or until barely brown on edges. Yield:
    approximately 6
