CREAMY GARLIC POTATO SOUP
List of Ingredients
7 large garlic cloves
700 g (1 lb 7 oz) "mealy" potatoes,
like King Edward (approx 8 potatoes)
1,2 liters (good 4 3/4 cups) chicken bouillon
1 bay leaf
dash white pepper
1/2 tsp salt
1 dl (good 1/3 cup) cream, not necessarily
whipping cream
parsley or chives
Recipe
Put the un-peeled garlic cloves in boiling water for 30 seconds, then rinse
them in cold water and peel them. Peel and slice the potatoes. Bring
potatoes and garlic to a boil in the chicken bouillon, add bay leaf and
flavor with white pepper and salt. Cover and let simmer slowly on low heat
for about 30 minutes.
Take up the bay leaf and puree the soup in a mixer or strain through a fine
sieve. Allow to cool to room temperature, then beat in the cream. Sprinkle
with chopped parsley or chives and serve immediately. Enjoy!
